About Us

Here at Brooklyn's, all of our dishes are made from scratch with careful attention to detail and a focus community. Our goal is to provide Buda, Texas and the surrounding areas of Central Texas with a lively and inviting atmosphere that can be enjoyed by those of all ages.

 

We've created an eclectic menu centered around unique flavors and fresh ingredients - featuring traditional American entrees, Cajun/Southern inspired cuisine, and traditional dishes from Mexico. Everything is made to order, allowing us to serve many different special dietary needs including gluten-free, pescatarian, vegetarian, and vegan entrees.

Brooklyn Robertson and Family

Brooklyn Robertson

Owner

Brooklyn was born in Utah, and raised in Colorado Springs, Colorado. His father was a professor at the Air Force Academy and at an early age he demanded excellence. Brooklyn went on to graduate at the top of his class with a Chemistry Degree from Colorado State University, and then received his Doctorate of Biochemistry from the University of Texas. Brooklyn has worked side by side with some the world's leading orthopedic and spine surgeons, spent years doing research for the Center For Blood Research at Harvard Medical School, and sold many medical patents. He’s traveled the world in search of adventure, married the love of his life, and had two beautiful children. Yet still at the end of the day nothing could have prepared him for owning a restaurant like Brooklyn’s Down South. With the help of Mirna Lenus and Andrea Garcia, Brooklyn and his family opened Brooklyn’s Down South in 2015. Each year since opening, they have strived to expand and improve all aspects of the restaurant. A lifelong goal for this piece of Buda’s history is to create an inviting atmosphere that can be enjoyed and benefitted from by the community and put Buda on the map. The same excellence and determination that was demanded of Brooklyn throughout his life, is the same excellence he expects of the staff and food quality at Brooklyn’s Down South. There's really no other restaurant like Brooklyns - we always strive to be the best!

Mirna Lemus

Catering Manager and Event Coordinator

Mirna Lemus is an accomplished entrepreneur from El Salvador with over 20 years of experience in the service and hospitality industry. Her journey began as a young woman when she started her first family business, Elsis’s, a small Salvadorian restaurant in her local community. With her unwavering commitment to quality, Mirna's family business quickly grew in popularity. Her exceptional attention to detail, dedication to customer service, and willingness to take risks have been key factors in her success. Mirna's leadership and entrepreneurial spirit have not gone unnoticed. She has been recognized both locally for her contributions to the hospitality industry, receiving numerous accolades for her achievements. Mirna is also committed to giving back to her community. She has been involved in various philanthropic initiatives, including supporting local farmers and providing job opportunities for women. Despite her many accomplishments, Mirna remains humble and grounded. She continues to seek out new challenges and opportunities to grow her businesses and make a positive impact on her community. As a mother of five children, Mirna understands the importance of providing a family-friendly experience in her businesses. She has made it a priority to create an environment that is welcoming to people of all ages, and her establishments are known for their warm and inviting atmosphere. Mirna's commitment to creating a family-friendly experience has paid off in more ways than one. Not only does it attract more customers, but it also creates a sense of community and belonging within her establishments. Families often return to Brooklyn’s time and time again, not only for the quality of the food and service but also for the welcoming and inclusive atmosphere.Despite the challenges of balancing motherhood with entrepreneurship, Mirna remains dedicated to her family and her businesses. Her success in both areas serves as a testament to her hard work, passion, and unwavering commitment to excellence.

Andrea Garcia

General Manager

Born and raised in Austin, TX, Chef Andrea has been professionally cooking for over a decade and has worked at Phara's Mediterranean Cuisine, Botticelli's and No Se Cafe, and has been with Brooklyn's Down South since the beginning. She received a BA in Business from Southwestern University and a BS in Culinary Management from the Art Institute of Austin, and always knew that food was her passion. She began cooking at home at a young age and believes fervently that food should be made with love and bring people joy.

Sean Cope

Bar Manager

Prepare to have your taste buds tantalized by the masterful concoctions of Bar Director Sean Cope, affectionately known as "Cope" in the industry. With over a decade of experience under his belt, Cope's journey from server to bartender to manager has been nothing short of extraordinary. Cope started his career in the restaurant industry as a server and quickly moved his way behind the bar and into management roles. “ I loved the industry but when opportunity knocks... sometimes you gotta knock back” - Cope The opportunity he spoke of was taking a hiatus from the bustling restaurant scene to embark on a transformative adventure, traveling to the enchanting Big Island of Hawaii. The ethereal beauty and vibrant culture of the island left an indelible mark on his soul—a flame that continues to burn and is reflected in the cocktails he crafts. Drawing inspiration from the lush landscapes, tropical flavors, and the relaxed island way of life, Cope has become a force to be reckoned with in the world of mixology. Specializing in Tiki and Classic bartending skills, blending traditional with modern, and gastronomy techniques, pushing the boundaries of what a cocktail can be. Beyond his love for mixology, Cope is a dedicated family man with three little ones waiting for him at home. The love and appreciation for his family spills over into his craft and the style in which he leads his team, as he strives to foster not only beautiful drinks and exceptional bartenders but unforgettable experiences for every guest and team member who enters Brooklyn's Down South. In Cope's own words, "I love this industry—the way that we get to be creative and analytical at the same time. The opportunities that we have to create cocktail and culinary art the duty that we have to create unforgettable experiences for our guests... This is what drives me to guide my team to always learn and grow, and this is what drives me forward in my own career."
